Black Bean-Tomato Soup with Cilantro-Lime Cream
A puree of sautéed onions and celery combined with southwest blends of cumin, Chile powder, garlic, black pepper, signature black beans, and ripe tomatoes. Topped with a sour cream, cilantro, and lime cream. Garnished with colorful tortilla strips.
Tumbleweed Turkey Spirals
Sliced turkey spread with chilies, ripe olives, fresh cilantro, cream cheese, and ranch dressing. Wrapped up tight into a flour tortilla and garnished with red pepper.
Chipotle Seared Tuna Steaks
Fresh tuna steak rubbed in a southwestern BBQ blend, topped with an avocado salad and drizzled with chipotle ponzu sauce. Served on a bed of jasmine rice.
Vegetable Cheese Torta with Fresh Tomato Salsa
A Southwestern crust-less quiche with eggs, potatoes, garlic, jalapeños, Monterey Jack cheese, roasted red pepper, zucchini, green chilies and cilantro. Served with a fresh tomato salsa.
Margarita Melon Salad with Lime Yogurt
A combination of cool watermelon, cantaloupe, and honeydew salad tossed in lime juice and sugar dressing and topped with a lime yogurt.
Sopapilla Cheesecake Bars
Two layers of tender and flaky crescent holds the creamy cheesecake center topped with cinnamon, powdered sugar and a honey drizzle.
