An island twist on an old favorite! Three large shrimp served with a zesty mango cocktail sauce.

Caribbean Black Bean Soup (Vegetarian)

A  hearty blend of vegetables and black beans with a hint of cilantro and coconut.



Jerk Pork with Pineapple Cucumber Salsa

Seasoned pork tenderloin topped with a sweet and spicy pineapple cucumber salsa. Served with a side of Caribbean rice that features onion, butternut squash, and coconut flavors.

Black-Eyed Pea Stew with Spicy Pumpkin (Vegetarian)

A delectable pairing of spiced pumpkin and an authentic Caribbean style stew featuring black-eyed peas, carrots, red peppers, and onions.



Mango Coconut Rice Pudding

A creamy rice pudding sprinkled with mango and toasted coconut.

Margarita Angel Cake

A fluffy angel food cake with a glaze made with a sweet, tropical lime flavor and a hint of tequila.
