Huskie Fresh is NIU’s new meal kit service. We work to create and prepare sustainable, nutritious, flavorful dinners to help with life’s busy schedules. Our meal kits are partially prepared, pre-measured and come with detailed recipe instructions to help you make the best meal possible in under 30 minutes at home.  With each purchase, you not only make your life a little easier, you give back to our Huskies with 10% of profits donated to the Student Assistance Fund.

Stuffed Peppers with Elote

Baked red bell pepper stuffed with ground beef, beans, tomato and Mexican-style spices topped with cheddar cheese. On the side, Mexican-style street corn: Char-grilled, brushed with spicy mayo, and sprinkled with cotija cheese and chopped cilantro. 

Order deadline: Midnight, Monday, Feb. 14.

Pickup between 4 p.m. Monday, Feb. 21 through 6 p.m. Wednesday, Feb. 23.
