Illinois has an abundance of farms. Yet, most of the food consumed in the state is not locally produced, and many residents struggle with food insecurity. NIU’s Edible Campus program aims to change that by transforming parts of NIU’s campus into a landscape you can eat – and creating a living laboratory for food systems research.
At this webinar, you’ll learn about how NIU collaborated with many different partners – including local businesses and high schools – to create this ambitious new program. Get insight into how food insecurity affects residents in communities across Illinois. And find out how food systems innovation can address the problem, creating stronger and healthier communities.
