View mapPlease join us in celebrating Earth Month with Meatless Mondays. Campus Dining is working with students from ENVS 303 and VEG to raise awareness about how reduced meat consumption supports sustainability and helps to reduce your carbon footprint. On Monday, April 3, 10, 17 and 24, Neptune Dining and Patterson Dining will alternate Meatless Mondays where the traditional line will offer all plant-based options for both lunch and dinner.
11 a.m. to 2 p.m. April 3, Neptune Lunch Menu:
- Spicy black bean soup.
- Beyond Beef sloppy joes.
- Spicy mushroom jambalaya.
- Linguini with tofu and vegetables.
- Steamed broccoli.
- Baked potato.
- Mock egg salad.
4 to 7 p.m. April 3, Neptune Dinner Menu:
- Bean and chili burrito.
- Southwestern chili with beans.
- Sweet potato and tofu Thai curry.
- Cavatappi and spaghetti sauce with meatless crumbles.
- Tomato with white beans and kidney beans.
- Mexican rice.
- Baked potato.
- Mock egg salad.
