Ellington’s is a student-run restaurant located in Holmes Student Center. The students of FCNS 320 Quantity Food Production plan, prepare, and serve delicious three course meals with a theme at Ellington’s as part of their course requirements in the areas of Nutrition, Dietetics, and Hospitality Administration, housed within the College of Health and Human Sciences. These students are food and nutrition experts of tomorrow, and they are looking forward to an opportunity to have you as their guests!

Sweet Potato & Pear Soup*
Garnished with greek yogurt, pear chips, and fresh mint
Pear & Pomegranate Salad*
Pomegranate and pears served over leafy greens with a homemade honey Dijon vinaigrette

Stuffed Santa Fe Vegetarian Pepper*
Bell pepper served open faced with black beans, corn, jalapeño, and monterey cheese. Served with cilantro lime quinoa and topped with a tomatillo-pear salsa.
