Turkey Mushroom Meatloaf “Cupcakes”

Our take on our mothers’ meatloaves, two turkey meatloaf “cupcakes” are frosted with a sweet potato and russet potato duo. Homemade ketchup is used in the meatloaf to add extra flavor and tenderness. Served with roasted lemon asparagus.
